Fresh Pasta Puttanesca

Step 1: Make fresh pasta. 3 cups of flour + 4 eggs = yum.

Step 2: Make Pasta Puttanesca with fresh pasta. Double yum.

Brioche Bun stuffed with Curried Turkey

For dinner tonight, I used the leftover brioche dough I had from earlier this week. Stuffed it with a curried ground turkey mix and it was delicious! I am really awful at dividing up dough so I ended up with 11 buns.

“Stacy: hahah
dozen = 12
baker’s dozen = 13
eve’s dozen = 11″

I will get my kitchen scale from Amazon this week so maybe I’ll weigh my dough and make sure they are divided evenly… (but most likely not because I’m way too lazy to do that)

Brioche Bun stuffed with Curried Turkey
Dough:
Use the brioche dough from the post linked above.
Filling:

  • 1/2 lb of ground turkey
  • 1/4 cup of chopped onions
  • 1/4 cup peas (frozen is fine)
  • 1/4 cup corn (frozen is fine)
  • 1 tablespoon olive oil
  • dash of salt and pepper
  • curry powder to taste

Directions:

  1. Brown the ground turkey and onion in the olive oil, salt and pepper to taste. Add peas and corn and cook for about 2 minutes. Add curry powder until it’s tasty. Fill brioche like the recipe linked above. Bake, and Eat.

Challah Bread! It’s so pretty.

This is my first braided loaf, and it was lots of fun. Used 4 ropes instead of 3 and it’s so much prettier. I brought it over to Sean’s aunt’s birthday party and it was a very successful loaf. She gave me her recipe for a flax seed and oats challah that sounded really tasty. I think I will braid my next brioche loaf as well. Lesson learned: Make sure you egg wash the entire thing thoroughly, or else you get dry spots that aren’t very pretty!

White Chocolate and Macadamia Brioche

Yup the bad influencers struck again, they kept posting picture after picture of delicous brioche and I am weak. As if brioche isn’t rich enough, I stuffed mine with white chocolate and macadamia nuts. I used a modified recipe, or more like took two recipes and mashed them into one, taking whatever sounded the best (or easiest!) from both recipes.
I made 6 of these suckers so far, reserving the rest of the dough for a savory filling this weekend. I’m pretty sure the sweet ones will be gone by the end of the day… I’m about to eat another one.
White Chocolate and Macadamia Brioche Recipe, modified here and there…
Dough:
  • 2 3/4 cups Unbleached All-Purpose Flour
  • 1 tablespoon active dry yeast
  • 1/4 cup nonfat dry milk
  • 1/4 cup lukewarm 1% milk
  • 3 tablespoons sugar
  • 1 1/4 teaspoon salt
  • 3 large eggs
  • 10 tablespoons butter, room temperature
Filling:
  • 1/2 cup white chocolate chips
  • 1/2 cup macadamia nuts

Directions:

  1. In a mixer, combine all ingredients to form a shiny smooth dough. Drop the butter in pieces so it gets incorporated while mixing. It takes about 15 to 20 minutes on medium-low speed. I used a paddle attachment at first, then used a hook attachment after 5 minutes.
  2. Form the dough into a ball and place in a greased bowl. Cover and let rise for 1 hour or more. Then refrigerate overnight.
  3. Divide the chilled dough into about 12 pieces, roll the pieces out with a rolling pan. Put about a tablespoon of the filling in the middle of the dough and wrap it all up, make sure it’s sealed tight. Turn it upside down and put it on a greased baking sheet or a muffin tin. I used a muffin tin but I really don’t think it would’ve made a difference.
  4. Cover the brioches and let it rise for 3 hours or so. It should double in size.
  5. Preheat oven to 375 degrees, bake for 25 minutes. Check them frequency, I had to put foil over top to prevent it from darkening after 10 minutes, and I took the foil off for the last 3 minutes to get the golden color.
  6. Remove from oven and let stand for 5 minutes, then place on a cooling rack.7. Eat it.

Amazon.com 4 for 3 promotion sucks me in yet again

These amazon people are evil, they sure know how to get you. I was only there to get this candy thermometer Alton Brown recommended on Good Eats, and it turned into a 3 day browsing extravaganza. The thermometer was eligible for the 4 for 3 promotion, i.e. buy 4 items and pay for only 3, the cheapest item in your cart will be FREE. So of course, being Asian, I had to find products right around that price range for the most effective DEALZ.

I finally decided on the following:

Oneida 4-Piece Stratford Turner Set because we need a new pair of tongs badly and you can always use more spatulas.

World Cuisine 16.37-Inch x 11.62-Inch Perforated Baking Mat (41540) because Stacy and Ronnie are evil and have convinced me that I should bake more breads.

Salter 1051 Aluminum Scale with Lighted Readout, Black, see above. Sean is pretty psyched about getting this too because now he can “make the perfectly sized hamburgers.” I love Salter scales, and this one is pretty sexy.

Now during this 3 day of constantly browsing through kitchen gadgets at amazon, I came across quite a few bizarre and useless things. Can you guess what these are??

Is it a nice comb for your hair?? A back scratcher??

Paper weight maybe… or a really bad dumbell…

Yes definitely something with pineapples, but what is it doing and is it legal?

iphone opens iphoto automatically, super annoying!

I have no idea when this started, but my iPhone has been opening up iPhoto every time I plug it in to charge. I don’t even use iPhoto, because it kind of sucks. By default I can’t find anything on my mac that regulates this behavior so it was annoying me to no end. I finally found this app Flexibits that allows the user to set the default behavior when a camera is plugged in. After installing flexibits, I can plug in my iPhone now without crazy stuff popping up all over the place.

yay!

Como Zoo in St Paul MN

Saturday we took a trip to the como zoo with Troy and Erika and their little baby Siri. We saw lions, and tigers, but no bears because his enclosure is under construction, oh my.
The place was PACKED, parking was ridiculous but the weather was cool enough and we were in great company, so it was a nice experience all around.
I even braved the enclosure full of “butterflies” aka nasty bugs with pretty wings to bring you these pictures. I didn’t enjoy creepy flappy bugs all around me, but I did enjoy playing with my camera and getting some good shots.

The giraffes was the most entertaining besides the monkeys, I kept trying to get a good shot of him sticking his nasty blue tongue out, and out of 10 pictures I got one! I need Ronnie’s awesome DSLR camera. :( I especially enjoy the first giraffe picture, he’s giving you such a disapproving look. The lion is also one of my favorites, he is just relaxing with his head on a tire, reminds me of my dogs.

The polar bear exhibit will be finished in 2010, I’m very glad he’s getting a (hopefully better) new enclosure because he would always swim around the old pool in the same pattern every time you visited, it was very sad.
And some people will tell you there are wolves at the como zoo, but every time I’ve visited, they are not out. I think it’s an elaborate lie, there is no cake. To get my wolf fix, I go to the Minnesota zoo, they have some magestic beautiful wolves there.
